Madras curry powder is considered to be spicier than your standard curry powder. It's spicy flavours come from the cayenne pepper used in the blend. This seasoning has great earthy flavours and a kick of spice if that is what you are looking for in your curry powder.
Directions for use: Heat Butter or Margarine or any edible oil and add sliced onions. Fry until light brown and then add the required quantity of curry powder. Stir for a minute and put in the meat, chicken or pork duly cut or slit and fry the contents for a few minutes. Add water to get desired consistency and stew gently for about 20 minutes. Serve hot to get the best taste.
