Ingredients
- 4 boneless, skin-on chicken thighs
- 3 tbsp Cool Runnings Caribbean spice and roasted garlic
- 2 tbsp olive oil (or vegetable oil)
- 1 tbsp lime juice (optional, for an extra zesty kick)
- Salt and black pepper, to taste
Directions
1. Pat the chicken thighs dry with paper towels to ensure a good sear.
2. Season the chicken thighs with salt and pepper, then sprinkle the Cool Runnings Caribbean Spice and Roasted Garlic Seasoning Blend on both sides. Rub the seasoning in to coat evenly. If desired, squeeze lime juice over the chicken for an added zesty kick.
3. Heat a large cast-iron skillet or non-stick pan over medium-high heat. Add the olive oil and let it heat up until shimmering (but not smoking).
4. Place the chicken thighs in the hot pan, skin-side down. Let them sear undisturbed for about 5-6 minutes, or until the skin is golden brown and crispy.
5. Flip the chicken thighs over, reduce the heat to medium, and continue cooking for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
6. Remove the chicken thighs from the pan and let them rest for a few minutes before serving. Serve and enjoy!
