Ingredients
- 8 chicken drumsticks (about 2–2.5 lbs / 1kg)
- 2 tbsp Cool Runnings jerk seasoning (hot)
- 1 tbsp Mekong premium soy sauce
- 1 tbsp lime juice or white vinegar
- 1 tsp Cool Runnings all purpose seasoning
- 1 tsp vegetable oil (for brushing or spraying)
- Optional: 1 tsp Cool Runnings gravy browning sauce (for darker color)




Directions
1. In a large bowl, combine the Cool Runnings jerk seasoning, soy sauce, lime juice or vinegar, all-purpose seasoning, and browning sauce (if using).
2. Add the drumsticks to the bowl and rub the marinade all over the chicken until fully coated. Cover and refrigerate for at least 2 hours, or preferably overnight for deeper flavor.
3. Preheat your air fryer to 380°F (193°C) for 3–5 minutes, if your model requires preheating.
4. Lightly brush or spray the marinated drumsticks with oil to help crisp the skin.
5. Place the drumsticks in a single layer in the air fryer basket, making sure they are not overcrowded. Cook in batches if needed. Air fry at 380°F (193°C) for 24–26 minutes, flipping the drumsticks halfway through cooking.
6. Check that the internal temperature reaches 165°F (74°C) and the skin is golden brown and slightly charred.
7. For extra crisp or charred edges, increase the temperature to 400°F (204°C) for the final 2–3 minutes of cooking.
8. Remove the drumsticks from the air fryer and let them rest for 5 minutes before serving.
9. Serve hot with island fried rice, slaw, grilled plantains, or your favorite Caribbean sides.
