Ingredients
- 1 can (340g) Cool Runnings corned beef
- 1/3 cup Cool Runnings hot pepper sauce
- 1 small onion, finely chopped
- 2 large eggs
- 1/4 to 1/2 cup all-purpose flour or breadcrumbs (adjust as needed)
- Vegetable oil, for frying


Directions
1. In a large bowl, break up the corned beef with a fork. Add the chopped onion, eggs, and Cool Runnings Hot Pepper Sauce. Mix until well combined.
2. Gradually add flour or breadcrumbs, a little at a time, until the mixture becomes thick enough to hold its shape when scooped (like thick batter or soft dough).
3. In a deep frying pan or skillet, heat about 1 inch of oil over medium heat. The oil is ready when a small drop of the mixture sizzles on contact.
4. Use a tablespoon or small scoop to drop portions of the mixture into the hot oil. Don’t overcrowd the pan. Flatten slightly with the back of the spoon if needed. Fry for about 2–3 minutes per side, or until golden brown and crispy.
5. Remove fritters and drain on a plate lined with paper towels to absorb excess oil. Serve hot, with extra pepper sauce or your favorite dip on the side.
