Ingredients
- 1 lb (450g) large raw shrimp, peeled and deveined
- 2 ears corn, cut into thirds
- 1 lb baby potatoes, halved
- 1 smoked sausage (about 250g), sliced into coins
- 1 red bell pepper, chopped
- 3 tbsp olive oil
- 2 tbsp Cool Runnings jerk seasoning (hot)
- 1 tbsp Cool Runnings Cajun seasoning
- 1 tsp Cool Runnings garlic powder
- Chopped parsley and lemon wedges for garnish



Directions
1. Preheat oven to 425°F (220°C) or heat grill to medium-high.
2. In a large pot, boil potatoes for 8–10 minutes until just tender. Drain and set aside.
3. In a large mixing bowl, combine shrimp, corn, potatoes, sausage, and bell pepper.
4. In a small bowl, whisk together olive oil, jerk seasoning sauce, Cajun seasoning, garlic powder, and a pinch of salt.
5. Pour the sauce over the shrimp and vegetables. Toss well to evenly coat.
6. Divide the mixture evenly among four large sheets of heavy-duty aluminum foil. Fold into tightly sealed packets.
7. Bake or grill for 15–18 minutes, until shrimp are cooked through and everything is tender.
8. Carefully open packets, garnish with fresh parsley, and serve with lemon wedges.
