Ingredients
- 3 cups bagged coleslaw mix (or shredded cabbage and carrots)
- 1 ripe mango, sliced
- 2 green onions, thinly sliced
- 2 tbsp chopped cilantro
- 2 oz white rum
- 2 tbsp Cool Runnings pineapple syrup
- 3 tbsp lime juice
- 2 tbsp olive oil
- ¼ tsp Cool Runnings all natural all purpose seasoning
- Salt and pepper to taste
- ½ small jalapeño, finely chopped (optional, for heat)


Directions
1. In a small bowl, whisk together pineapple syrup, lime juice, olive oil, salt, pepper, and the all natural all purpose seasoning until smooth.
2. In a large bowl, combine the cabbage and carrots mix, mango, green onions, cilantro, and jalapeño(if using).
3. Pour the dressing over the slaw and gently toss to coat evenly.
4. Chill in the fridge for at least 10 minutes to allow flavors to meld. Serve chilled.
