Ingredients
- 10 medium potatoes (Yukon gold or red), scrubbed, skin-on, cubed
- 1 medium size carrot, chopped
- 2 sweet or dill pickles, chopped
- ¼ cup mayonnaise of your choice
- 2 tbsp honey mustard sauce
- 1 green onion or 6 sprigs of chives, finely chopped
- Juice of half a lemon
- 1 ½ tsp Cool Runnings paprika
- 1 ½ tsp Cool Runnings all purpose seasoning
- Salt (for boiling water)


Directions
1. Add cubed potatoes to a large pot of salted water and bring to a boil. After 10 minutes, add chopped carrots. Continue boiling for another 5–7 minutes until potatoes and carrots are fork-tender. Drain and let cool completely.
2. In a large mixing bowl, combine cooled potatoes and carrots with chopped pickles, mayonnaise, honey mustard, green onion or chives, lemon juice, paprika, and Cool Runnings All Purpose Seasoning. Mix well until fully coated.
3. Taste and adjust seasoning as needed. Sprinkle extra paprika or seasoning on top for colour and flavour.
4. Refrigerate for 30–60 minutes before serving if you prefer it cold. Serve and enjoy!
