Ingredients
- 1 1/2 cups white sugar
- 1 cup vegetable oil
- 2 eggs
- 1 tspCool Runnings vanilla flavouring
- 3 cups all purpose flour
- 1 tsp British Class baking soda
- 1/2 tsp salt
- 1/2 tsp Cool Runnings ground cinnamon
- 1/4 cup white sugar
- 1 tsp Cool Runnings ground cinnamon
Directions
1. Whisk together the sugar and vegetable oil in a large bowl until well combined. Add the eggs and vanilla extract and mix until smooth.
2. In another bowl, whisk together the flour, baking soda, salt, and 1/2 tsp of cinnamon.
3. Add the dry mixture to the wet ingredients and stir until a soft dough forms.
4. Cover and refrigerate the dough for 10–20 minutes. Meanwhile, mix the 1/4 cup sugar and 1 tsp cinnamon in a small bowl for the coating.
5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. Remove dough from the fridge and scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in the cinnamon-sugar coating.
7. Arrange the dough balls on the baking sheet, leaving space between each one.
8. Bake for 10–12 minutes, until the edges are set and lightly golden.
9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
