Ingredients
- 1 whole red snapper (about 1.5 lbs), scaled, gutted, and washed with lime
- 1 tbsp Cool Runnings fish seasoning
- ½ tsp Cool Runnings garlic powder
- ½ tsp black pepper
- 1 tbsp oil
- 1 cup white vinegar
- 1 medium onion, sliced
- 1 carrot, peeled and cut into thin strips
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- 1 scotch bonnet pepper, sliced with seeds removed
- 4 pimento berries, crushed
- ¼ tsp black pepper
Directions
1. Pat the fish dry, then rub with oil. Season inside and outside with fish seasoning, garlic powder, and black pepper.
2. Place the fish in the air fryer and cook at 150°F for about 20 minutes, or until fully cooked and flaky inside.
3. While the fish cooks, add vinegar, pimento, and scotch bonnet to a pan and bring to a boil for 3 minutes.
4. Add onion, carrots, red and green peppers, and black pepper. Let simmer for 5 minutes.
5. Once the fish is done, place it on a platter and pour the escovitch sauce over the top. Serve and enjoy!
