Ingredients
- 4 lbs Chicken, cut in pieces
- 2 to 3 cups vegetable oil, for frying
- 2 cups all purpose flour
- 3 eggs
- 3 tbsp of Cool Runnings all purpose seasoning
- 3 tbsp of Cool Runnings chicken seasoning
- 1/2 tsp of black pepper ground
- 1/2 tbsp of salt
Directions
1. Pat the chicken pieces dry with paper towels. Place them in a large bowl and season with 2 tbsp of all purpose seasoning and 2 tbsp of chicken seasoning. Mix well, cover and refrigerate for at least 30 minutes or overnight for more flavour.
2. In a large bowl, combine the flour, salt, black pepper and 1 tbsp each of the all purpose seasoning and chicken seasoning. Mix well.
3. In a separate bowl, beat the eggs until smooth.
4. Dip each piece of seasoned chicken into the beaten egg, allowing any excess to drip off. Place the chicken in the seasoned flour and toss until evenly coated. Shake off any excess flour and set the coated chicken aside.
5. Add enough vegetable oil to a large, deep skillet to reach about 1½ to 2 inches deep. Heat the oil to 350°F (175°C).
6. Carefully add the chicken to the hot oil in batches, making sure not to overcrowd the skillet. Fry, turning occasionally, until the chicken is golden brown and cooked through, about 8 to 12 minutes per side depending on the size of the pieces.
7. Check the thickest part of the chicken with a meat thermometer. The internal temperature should reach 165°F (74°C) before removing it from the oil.
8. Transfer the fried chicken to a wire rack or paper towel lined plate to drain. Allow it to rest for a few minutes before serving. Serve warm with your favourite sides or dipping sauce.
