Tilapia with Lemon and Herbs

Ingredients

          1. Pat the tilapia fillets dry with paper towels. Season both sides with Cool Runnings Fish Seasoning, salt, and pepper.

          2. Heat coconut oil and butter in a large skillet over medium heat.

          3. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.

          4. Place the seasoned tilapia fillets in the skillet and cook for 2-3 minutes on one side until golden and slightly crispy. Flip the fillets and cook for another 2-3 minutes until the fish is cooked through and flakes easily with a fork.

          5. Squeeze a bit of lemon juice over the fillets during the last minute of cooking to enhance the flavor.

          6. Add lemon slices to the skillet for the last minute to char slightly and release their juices.

          7. Transfer the fillets to a plate and drizzle with any remaining pan juices. Serve immediately with a side of vegetables or rice.
