Ingredients
- 1 ⅔ cup mashed overripe Bananas (about 3-5 medium bananas)
- 2-3 tbsp of British Class brown sugar
- ¼ tsp of Cool Runnings nutmeg ground
- ¼ tsp of Cool Runnings cinnamon ground
- 1 tsp of Cool Runnings vanilla flavouring
- 1 cup all-purpose flour
- 2 tbsp cooking oil (plus 1 tbsp more if needed)
- A pinch of salt




Directions
1. In a bowl, mash the bananas until smooth. Stir in the brown sugar, nutmeg, cinnamon, vanilla extract, and a pinch of salt. Mix well to combine.
2. Gradually fold in flour until batter drops from a spoon but still holds shape. If the batter is too runny and thin, add a teaspoon of flour at a time.
3. Heat 2 tbsp of cooking oil in a pan over medium heat.
4. Drop spoonfuls of batter (about 2 tbsp each) into pan, flatten slightly. Fry 2–3 minutes per side, until golden and firm. Add oil between batches if needed.
5. Remove fritters and drain on paper towel. Serve warm and enjoy!
