
Ingredients
- 1 ⅔ cup mashed overripe Bananas (about 3-5 medium bananas)
- 2-3 tbsp. of British Class brown sugar
- ¼ tsp of Cool Runnings nutmeg ground
- ¼ tsp of Cool Runnings cinnamon ground
- 1 tsp of Cool Runnings vanilla extract
- 1 cup all-purpose flour
- 4-5 tbsp. cooking oil
- a pinch of salt




Directions
1. In a bowl, mash the bananas until smooth. Stir in the brown sugar, nutmeg, cinnamon, vanilla extract, and a pinch of salt. Mix well to combine.
2. Gradually add the flour, stirring until you get a thick but pourable batter. If the batter is too runny, add a little more flour.
3. Heat 2 tbsp of cooking oil in a pan over medium heat. Once hot, use a spoon to drop portions of batter into the pan, flattening slightly with the back of the spoon.
4. Fry for about 2-3 minutes per side until golden brown and crisp. If needed, add more oil between batches to prevent sticking.
5. To test for doneness, press lightly on a fritter—if firm and golden, they are ready. Remove and place on a paper towel to absorb excess oil.
6. Serve warm and enjoy!
