Ingredients
- 1L vegetable stock
- 400 g can chopped tomato
- 200 g Ditalini or Tubettini pasta (O-shaped pasta)
- 2 carrots, chopped
- 1 large onion, finely chopped
- 1 tbsp of olive oil
- 1 tsp Cool Runnings adobo seasoning
- 2 tsp Cool Runnings paprika
- 1-2 tsp Cool Runnings parsley flakes
- Grated parmesan to serve



Directions
1. In a large pot, heat olive oil over medium heat. Add the chopped carrots and onion and sauté for about 5 minutes, until softened.
2. Pour in the vegetable stock and chopped tomatoes. Bring to a simmer and cook for 10 minutes.
3. Stir in the Ditalini or Tubettini pasta. Let the soup return to a gentle boil and cook for 8–10 minutes, or until the pasta is just tender.
4. Season with Cool Runnings Adobo Seasoning and Paprika. Taste and adjust seasoning if needed.
5. Serve hot, sprinkled with Parmesan cheese and parsley flakes if using. Enjoy with crusty bread or garlic bread on the side.
