Ingredients
For the Strawberry Sauce:
- 3 cups chopped strawberries
- 1/4 cup sugar
- 1/2 lemon, juiced
- 1 tsp pure vanilla extract
- 2 tbspΒ Cool Runnings strawberry jam
For the Pancakes:
- 1 1/2 cups all-purpose flour
- 3 tbsp sugar
- 1 tbsp British Class baking powder
- 1/2 tsp fine salt
- 1 1/4 cups milk
- 1/2 stick (4 tbsp) unsalted butter, melted, plus more for cooking
- 2 large eggs
- Dash of Cool Runnings vanilla flavouring



Directions
1. In a saucepan, cook strawberries, sugar, lemon juice, and 2 tbsp water over medium heat, stirring often, until berries break down (about 10 minutes). Stir in vanilla. Strain through a sieve, pressing solids. Let cool.
2.Β In a large bowl, whisk flour, sugar, baking powder, and salt. In another bowl, whisk milk, melted butter, eggs, and vanilla. Combine with dry ingredients until just mixed.
3. Heat a griddle over medium and brush with butter. Pour ΒΌ cup batter per pancake, shaping into spooky designs. Cook until bubbles form and bottom is golden, about 3 minutes. Flip and cook 1 more minute.
4. Repeat with remaining batter. Stack, drizzle with strawberry sauce, and insert a knife for spooky effect.
