Ingredients
- 2 1/2 cups all-purpose flour, plus more for dusting
- 2 egg yolks
- 2/3 cup of warm milk
- 1/3 cup of Cool Runnings peach passion fruit jam
- 1/3 cup of Mekong sweetener whitener to roll donuts
- 1/4 cup of British Class golden sugar
- 4 tbsp of unsalted butter melted, divided
- 2 1/4 tsp of active dry yeast
- 1 tsp of Cool Runnings vanilla flavouring
- 1/4 tsp of salt




Directions
1. In a large mixing bowl, whisk together 1 cup of flour, ¼ cup British Class Golden Sugar, 2¼ teaspoons British Class Active Dry Yeast, and ¼ teaspoon salt.
2. Add the warm milk, 3 tablespoons melted butter, 2 egg yolks, and 1 teaspoon vanilla extract. Whisk vigorously until the mixture is well combined.
3. Cover the bowl with plastic wrap and let it rest at room temperature for 10 minutes, until bubbles begin to form on the surface.
4. Gradually add the remaining 1½ cups of flour, adding just enough until the dough comes together and pulls away from the sides of the bowl. Knead the dough in the bowl for 5 minutes. If it sticks to your hands, dust lightly with flour and continue kneading with clean, dry hands. Cover the bowl again and let the dough rise at room temperature for 1½ hours, or until doubled in size.
5. Line a baking sheet with parchment paper and preheat the oven to 375°F.
6. Transfer the dough onto a floured surface and roll it out to just under ½ inch thick. Use a 2.5-inch round cookie cutter to cut out circles. Re-roll the scraps as needed to make about 12 donuts. Place them on the prepared baking sheet, cover with a clean tea towel, and let rise for 45 minutes, or until puffed.
7. Bake the donuts uncovered in the center of the preheated oven for 10 to 12 minutes, or until lightly golden on top.
8. Immediately after baking, brush each hot donut with the remaining 1 tablespoon of melted butter, then roll in sugar to coat. Cut a deep slit into the side of each donut and pipe jam into the center using a pastry bag.
9. Serve warm and enjoy.
