Ingredients
- 1 tbsp British Class coconut oil
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1 Scotch bonnet pepper, chopped (optional)
- 1 tbsp Cool Runnings Jamaican style curry powder
- 400 ml Cool Runnings coconut milk
- 400g white fish, uncooked, cut into bite-size pieces
- Salt and black pepper, to taste
- 2 tbsp cilantro, finely chopped
Directions
1. Heat a pan on medium and add the British Class Coconut Oil. When it is hot, sautée the onion and garlic until slightly brown. Add the scotch bonnet pepper, Cool Runnings Jamaican Style Curry Powder, and Cool Runnings Coconut Milk.
2. Add salt and pepper and bring the sauce to a boil.
3. And the fish and cook it fully, about 10 minutes.
4. Remove from heat, add the cilantro and serve with your choice of rice or roti.
