- 2 tbsp olive oil
- 1 tbsp Cool Runnings garlic, peppers & herbs seasoning
- 1 cup black beans (about 1 can, drained, or 1/2 cup, uncooked)
- 1 cup corn
- 2 peaches, cubed
- 1 Roma tomato, cubed
- 5 sprigs of cilantro, picked
1. In a small bowl, mix olive oil and Cool Runnings Garlic, Peppers & Herbs Seasoning
2. In a large bowl, mix all the remaining ingredients and add the oil mixture until evenly coated.
3. Enjoy on its own or as a side!
