Caribbean Jerk Chicken & Pineapple Skewers

Ingredients  
  • 1½ lbs boneless, skinless chicken thighs, cut into 1½-inch pieces
  • ½ cup Cool Runnings Jerk seasoning (Hot or your choice)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1½ cups fresh pineapple chunks
  • Wooden or metal skewers (soaked if wooden)
        Directions
        1. In a large bowl or zip-top bag, combine chicken and Cool Runnings Jerk Seasoning Sauce. Mix well to coat evenly. Cover and marinate in the fridge for at least 1 hour (overnight for best flavour).

        2. Preheat grill to medium-high heat. If using wooden skewers, soak in water for 30 minutes to prevent burning.

        3. Thread marinated chicken, bell peppers, onion, and pineapple onto skewers, alternating pieces for colour and flavour variety.

        4. Grill skewers for 12–15 minutes, turning occasionally, until chicken is cooked through and lightly charred.

        5. Remove from grill and let rest a few minutes. Serve with rice, fries or a crisp salad.
