Ingredients
- 1 tablespoon olive oil
- 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
- 2 teaspoons Cool Runnings garlic, pepper & herbs
- 1 can (14.5 oz) fire roasted diced tomatoes
- 1 can (8 oz) unsweetened pineapple chunks, drained
- ΒΌ cup Cool Runnings barbecue sauce
- Hot cooked rice, for serving
- Fresh cilantro leaves, optional
Directions
1. Heat olive oil in a large skillet over medium high heat.
2. Add chicken and garlic herb seasoning. Cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned and no longer pink.
3. Stir in diced tomatoes, pineapple chunks, and barbecue sauce. Bring to a gentle boil.
4. Reduce heat slightly and simmer for 5 to 7 minutes, stirring occasionally, until the sauce thickens slightly and the flavors are well combined.
5. Serve hot over cooked rice and garnish with fresh cilantro if desired.
