Ingredients
- 1 medium zucchini
- 1 tablespoon olive oil
- 3/4 teaspoon Cool Runnings jerk seasoning spice (adjust to taste, go light)
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
Directions
1. Slice zucchini into thin rounds about 1/8 inch thick using a knife or mandoline. Pat the slices dry with paper towel to remove excess moisture.
2. Preheat air fryer to 325°F (162°C). In a bowl, toss zucchini with olive oil, jerk seasoning, sea salt, and black pepper. Separate any slices that stick together.
3. Place zucchini in the air fryer basket in a single layer without overcrowding. Cook for 8 to 12 minutes, flipping halfway through. Start checking around the 8 minute mark and remove any pieces that are crisp and golden.
4. Let chips cool for a few minutes to crisp up fully before serving.
