Ingredients
- 500g boneless chicken breast, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium carrot, thinly sliced
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp Cool Runnings ginger powder
- 2 tbsp Mekong sweet chili sauce
- 1 tbsp Mekong premium soy sauce
- 1 tsp Cool Runnings all natural all purpose seasoning
- 1/4 tsp black pepper
- 2 green onions, chopped (for garnish)
- 1 tsp sesame seeds (optional, for garnish)
- Cooked rice or noodles, for serving




Directions
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the chicken pieces and season with Cool Runnings All Natural All Purpose Seasoning and black pepper. Cook for 5–6 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove from the pan and set aside.
3. In the same skillet, add the garlic, ginger powder, and sliced vegetables. Stir-fry for 3–4 minutes until vegetables are tender-crisp.
4. Return the chicken to the pan. Add Cool Runnings Sweet Chili Sauce and Soy Sauce. Toss everything together for 1–2 minutes until the chicken and vegetables are well coated and heated through.
5. Remove from heat and garnish with chopped green onions and sesame seeds, if desired.
6. Serve immediately over steamed rice or cooked noodles.
