Ingredients
- 1 large head of broccoli, cut into florets
- 2 tbsp olive oil
- 1 tsp Cool Runnings garlic powder
- ½ tsp Cool Runnings onion powder
- ½ tsp Cool Runnings black pepper ground
- ½ tsp Cool Runnings seasoning salt
- ¼ cup grated Parmesan cheese (optional)
- Juice of ½ lemon
Directions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Sprinkle the baking sheet evenly with Parmesan cheese to create a thin layer.
3. Arrange the broccoli florets on top of the cheese, spacing them slightly so there is room to smash.
4. Take a small shot glass or the bottom of a glass and gently but firmly press down on each floret to slightly flatten it.
5. Drizzle olive oil over the broccoli and sprinkle with Cool Runnings Garlic Powder, Onion Powder, and Seasoning Salt.
6. Roast in the oven for 25-30 minutes, or until the cheese has turned golden brown and the broccoli is crispy on the edges.
7. Remove from the oven, squeeze fresh lemon juice over the top, allow to cool slightly, then break apart to serve.
