Saltfish Fritters

  • 1 cup salted codfish (saltfish), soaked overnight and flaked
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 scotch bonnet pepper, finely chopped (adjust according to your spice preference)
  • 1 small bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks scallions, finely chopped
  • 1 teaspoon British Class baking powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon Cool Runnings paprika
  • 1 teaspoon Cool Runnings Jerk Seasoning
  • 1/2 teaspoon Cool Runnings All Purpose Seasoning
  • 1/4 cup milk
  • 1/4 cup water
  • Vegetable oil for frying
  • Salt to taste

        1. Prepare the saltfish by boiling it until tender, then flake it into small pieces.

        2. In a mixing bowl, combine the flaked saltfish with flour, chopped onion, scotch bonnet pepper, bell pepper, garlic, scallions, baking powder, black pepper, paprika, Cool Runnings Jerk Seasoning, and Cool Runnings All Purpose Seasoning.

        3. Gradually add milk and water to the mixture, stirring until a thick batter forms.

        Heat vegetable oil in a frying pan over medium-high heat.

        Carefully drop spoonfuls of the batter into the hot oil, forming small fritters. Avoid overcrowding the pan.

        6. Fry the fritters for 2-3 minutes on each side until golden brown and crispy.

        7. Remove the fritters from the oil using a slotted spoon and drain them on paper towels.

        8. Serve the saltfish fritters hot as a snack or appetizer, with your favorite dipping sauce if desired. Enjoy!
