Saltfish Fritters

1. Prepare the saltfish by boiling it until tender, then flake it into small pieces.

2. In a mixing bowl, combine the flaked saltfish with flour, chopped onion, scotch bonnet pepper, bell pepper, garlic, scallions, baking powder, black pepper, paprika, jerk Seasoning, and all purpose seasoning.

3. Gradually add milk and water to the mixture, stirring until a thick batter forms.

4. Heat vegetable oil in a frying pan over medium-high heat.

5. Carefully drop spoonfuls of the batter into the hot oil, forming small fritters. Avoid overcrowding the pan.

6. Fry the fritters for 2-3 minutes on each side until golden brown and crispy.

7. Remove the fritters from the oil using a slotted spoon and drain them on paper towels.

8. Serve the saltfish fritters hot as a snack or appetizer, with your favorite dipping sauce if desired. Enjoy!
