Gingerbread Waffles

1. In a large bowl, whisk together the flour, Cool Runnings ground ginger, ground cinnamon, ground nutmeg, baking powder, and salt.

2. In another bowl, beat the eggs and then add the molasses, brown sugar, milk, melted butter, and vanilla extract. Mix until well combined.

3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

4. Preheat your waffle iron according to the manufacturer's instructions.

5. Pour the batter onto the preheated waffle iron and cook according to the manufacturer's instructions until golden brown and crisp.

6. Serve the gingerbread waffles warm with your favourite toppings, such as maple syrup, whipped cream, or fresh fruit.
