Ingredients
- 2 cups grated fresh coconut (or unsweetened shredded coconut)
- 1 ½ cups British Class brown sugar
- 1 tsp Cool Runnings vanilla flavouring
- 1 tsp Cool Runnings ginger powder
- ½ tsp Cool Runnings ground cinnamon
- ½ cup water
- ½ cup shredded coconut
Directions
1. In a large saucepan, combine the grated fresh coconut, brown sugar, ginger, cinnamon, and water. Mix well.
2. Place the saucepan over medium heat and stir occasionally. Let the mixture simmer until the sugar melts and everything comes together in a thick, sticky consistency. This should take about 10-15 minutes.
3. Once the mixture is sticky and well combined, remove it from the heat and let it cool slightly. When cool enough to handle, take small portions and roll them into balls (about 1 inch in diameter).
4. Roll the coconut balls in shredded coconut to coat them completely.
5. Place the coconut balls on a tray lined with parchment paper and allow them to cool completely. Once set, they are ready to serve.
