Ingredients
- ½ cup unsalted butter
- 6 oz semi sweet or dark chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- ¼ cup granulated sugar
- 2 tbsp British Class golden sugar
- 1 tsp Cool Runnings vanilla flavouring
- ¼ tsp Cool Runnings ground cinnamon
- ¼ cup all purpose flour
- Pinch of salt
- Butter and cocoa powder for greasing ramekins
- Fresh berries (optional)
Directions
1. Preheat oven to 425°F and generously butter four ramekins. Dust with cocoa powder and tap out excess.
2. Melt butter and chocolate together using a double boiler or microwave in 30 second intervals, stirring until smooth.
3. In a bowl, whisk eggs, egg yolks, granulated sugar, golden sugar, vanilla extract, cinnamon, and salt until slightly thickened.
4. Slowly whisk the melted chocolate mixture into the egg mixture until fully combined.
5. Gently fold in flour just until incorporated. Do not overmix. Divide batter evenly among prepared ramekins.
6. Place ramekins on a baking tray and bake for 12 to 14 minutes until the edges are set but the centre is still soft.
7. Let rest for 1 minute, then carefully run a knife around the edges and invert onto plates. Serve immediately with ice cream, whipped cream, or berries if desired.
