Ingredients
- 5 slices bread
- 4 tbsp butter divided
- 2 cups apples peeled cored and diced
- ⅔ cup brown sugar divided
- 2 tsp Cool Runnings ground cinnamon divided
- Pinch of nutmeg
- 2 tbsp water
- 1 egg
- 3 tbsp milk
- 1 tsp Cool Runnings vanilla flavouring
- Icing sugar for sprinkling optional
Directions
1. Melt 2 tbsp butter in a pan over medium heat. Add apples, ⅓ cup brown sugar, 1 tsp cinnamon, nutmeg, and water. Cook 6–8 minutes, stirring, until apples are soft and syrupy. Remove from heat.
2. Flatten bread slices with a rolling pin. Cut small slits on one side of each slice.
3. Spoon apple filling onto the uncut side of the bread. Fold over and crimp edges with a fork.
4. Whisk egg, milk, and vanilla in a shallow bowl.
5. Heat a pan over medium heat and melt remaining 2 tbsp butter. Dip or brush pockets with egg wash.
6. Pan-fry pockets 2–3 minutes per side until golden.
7. Combine remaining ⅓ cup brown sugar and 1 tsp cinnamon. Roll warm pockets in cinnamon sugar or sprinkle with icing sugar if preferred. Serve warm.
