Ingredients
- 1 lb sole fillets or any firm white fish, cut into bite sized pieces
- 1 tsp British Class green seasoning
- 1/4 tsp Cool Runnings seasoning salt
- 1/8 tsp black pepper
- 1/2 tsp Cool Runnings hot pepper sauce
- Vegetable oil, for frying
- 1 cup chilled carbonated water
- 1 cup all purpose flour, plus extra for dredging
- 1 egg
- Pinch of Cool Runnings seasoning salt
- Pinch of black pepper
- 1 scallion, finely chopped (green part only)
Directions
1. If using frozen fish, thaw completely and gently squeeze out any excess moisture using paper towels. Cut into bite sized pieces.
2. In a bowl, season the fish with green seasoning, seasoning salt, black pepper, and hot pepper sauce. Mix well and let marinate for 10 minutes.
3. In a separate bowl, whisk together the chilled carbonated water, flour, egg, pinch of seasoning salt, black pepper, and scallion until just combined. The batter should be smooth but still light.
4. Pour vegetable oil into a deep frying pan or pot and heat over medium high heat until it reaches 350°F (175°C).
5. Lightly coat each piece of fish in the extra flour, then dip into the batter, allowing any excess to drip off.
6. Carefully place the battered fish into the hot oil in batches. Fry for 2 to 4 minutes per side, or until golden brown and crispy.
7. Transfer the cooked fish to a wire rack or paper towel lined plate to drain any excess oil.
8. Serve immediately with your favourite dipping sauce such as tartar sauce, ranch, ketchup, or extra hot pepper sauce, and some fries and a wedge of lemon!
