Okra and saltfish

Servings: 4 | Preparation time: 25 minutes | Cooking time: 10 minutes

Ingredients
  • ½ - 1 lb saltfish (226g–450g), prepared
  • 1 small onion, chopped
  • 3 scallions, sliced (optional)
  • 4 garlic cloves, minced
  • 1 cup okra, parboiled and chopped
  • 1 cup mixed bell peppers, chopped
  • 1 large tomato, chopped
  • 1 tablespoon tomato paste
  • 1 tablespoon Cool Runnings seafood seasoning
  • 6 sprigs thyme, stems removed
  • Scotch bonnet, chopped to taste
  • 4 tablespoons olive oil or coconut oil
  • Pink salt and black pepper, to taste

Directions
1. Add the oil to a frying pan over medium heat. Sauté the onion, scallions, and garlic until soft and translucent.

2. Add the okra and bell peppers, cooking until softened.

3. Fold in the saltfish and Scotch bonnet, then cook for a few minutes.

4. Add the tomato and tomato paste, stirring well for about 1 minute.

5. Season with seafood seasoning, thyme, black pepper, and salt to taste.

6. Mix everything together and cook for another 2 to 3 minutes until well combined. Serve with dumplings and enjoy!
