Jamaican Pork Chops

Ingredients

 

  • 4 bone-in pork chops (about 1 inch thick, 1–1.5 lb total)
  • 2–3 tbsp Cool Runnings jerk seasoning spice
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1–2 Scotch bonnet peppers, seeded and minced (optional, adjust to heat tolerance)
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp brown sugar or honey
  • Juice of 1 lime
  • 1/2 tsp freshly ground black pepper
  • Salt to taste
  • Fresh cilantro or parsley, chopped
  • Lime wedges
Directions
1. In a bowl, combine jerk seasoning, garlic, thyme, Scotch bonnet, soy sauce, olive oil, brown sugar, lime juice, black pepper, and a pinch of salt. Rub mixture evenly over both sides of the pork chops. Cover and refrigerate for at least 1 hour, preferably 2–4 hours.

2. Heat a large skillet or grill pan over medium-high heat. If using a skillet, add a little oil to prevent sticking.

3. Remove chops from the marinade, letting excess drip off. Place pork chops in the hot pan and sear for 4–5 minutes per side until golden brown. Reduce heat to medium and continue cooking for another 5–7 minutes, or until internal temperature reaches 145°F (63°C).

4. Remove from heat and cover loosely with foil. Let rest for 5 minutes to allow juices to redistribute.

5. Garnish with chopped cilantro or parsley and lime wedges. Serve with your choice of sides: coconut rice, roasted vegetables, or sweet fried plantains work beautifully.
