Ingredients
- 3 salmon fillets, skin on
- 1 tbsp Cool Runnings jerk seasoning ( hot, mild, or scotch bonnet)
- 4 to 5 sprigs of fresh thyme
- 4 cloves garlic, crushed
- 2 tbsp neutral cooking oil
- Salt and pepper to taste
- 1/4 cup honey
- 2 tbsp Cool Runnings jerk seasoning ( hot, mild, or scotch bonnet)
- 2 tbsp hot water
- 1 tsp fresh lime juice
Directions
1. Pat the salmon fillets dry with paper towels. Season the flesh side with salt and black pepper, then rub evenly with 1 tablespoon of Cool Runnings Jerk Seasoning Sauce.
2. Heat the oil in a large cast iron or non stick skillet over medium high heat. Add the thyme and crushed garlic, then place the salmon in the skillet skin side down.
3. Cook for 6 to 7 minutes without moving the salmon, or until the skin is crisp and the salmon releases easily from the pan. Carefully flip and cook for another 3 to 5 minutes, or until the salmon is cooked through. Transfer to a plate and set aside.
4. Reduce the heat to medium and carefully remove most of the oil from the skillet, leaving about 1 teaspoon behind.
5. In a small bowl, mix together the honey, Cool Runnings Jerk Seasoning Sauce, hot water and lime juice.
6. Pour the honey jerk mixture into the skillet and stir for 1 to 2 minutes until slightly thickened.
7. Return the salmon to the skillet and spoon the glaze over each fillet until well coated. Cook for another 1 to 2 minutes, allowing the glaze to become glossy and lightly caramelized. Serve hot with your favourite sides.
