Ingredients
- 2 ripe bananas, mashed
- 2 large eggs
- ⅓ cup vegetable oil or melted butter
- ⅓ cup brown sugar
- 1 tsp Cool Runnings vanilla flavouring
- 1 cup all-purpose flour
- 1 cup British Class rolled oats
- ¼ cup unsweetened cocoa powder
- 1 tsp British Class baking powder
- ½ tsp British Class baking soda
- ½ tsp Cool Runnings ground cinnamon
- ¼ tsp salt
- ¾ cup semi-sweet chocolate chips, divided
Directions
1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
2. In a large bowl, whisk together the mashed bananas, eggs, oil, brown sugar, and vanilla extract until smooth.
3. In a separate bowl, combine the flour, oats, cocoa powder, baking powder, baking soda, cinnamon, and salt.
4. Add the dry ingredients to the banana mixture and stir until just combined. Do not overmix. Fold in ½ cup of the chocolate chips.
5. Divide the batter evenly among the muffin cups, filling each about three-quarters full. Sprinkle the remaining chocolate chips on top.
6. Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out with a few moist crumbs.
7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
